The Cape Ruby is made from our cabernet sauvignon grapes fortified with pure alcohol;, therefore the wine is not as thick and syrupy as normal port styles. It contains hints of raisins or even honey on the pallet, with 16.5% alcohol. This wine goes very well with cheese platters or after dinner as a dessert.
Maturation Potential
The wine is ready to drink now, but will mature well for a further 12 years.

The grapes were harvested by hand during the beginning of March. After destalking and crushing, the must was fermented in open fermenters at 25˚C to 28˚C. The juice was separated from the skins after 5 days and fortified. After filtration the wine was racked into a combination of second and third fill French Oak barrels for a period of 24 months.
