This is a medium-bodied and well-balanced Sauvignon Blanc with a lingering aftertaste of tropical fruit. Elegant balance is achieved through its crisp acidity.

The wine is ready to drink now, but will mature well for a further 2 years.

The grapes were harvested by hand during the first week of February. First, the juice was cleared and settled. Then, yeast cultures were added. Fermentation took place at approximately 14 degrees Celsius. The wine was left to rest on the lees. Stirring took place once a week to add to the creamy mouthfeel of the wine and to ensure all lees flavours were released.
